Spanish Rice

The ingredients you need are:

  • 1 white onion
  • 1 Lb of 90/10 ground beef
  • Diced tomatoes (2 medium tomatoes or 1 can, 14.5 oz)
  • 1 8 oz can of tomato sauce
  • 2 cups cooked white rice

Seasoning:

  • 2 tsp black pepper (separated)
  • 2 tsp salt (separated)
  • Your choice of beef seasoning
  • 1 tsp oregano to taste
  • 1 tsp basil to taste
  • 1 Tbsp of minced garlic
  • 1/2 tsp crushed red pepper (optional)

Before anything else, you will want to prepare the rice. To prepare rice on a stove top, turn the stove to medium or medium high, then pour in 1 cup of chicken broth and 1 cup of water. (alternative, use a chicken bouillon cube and 2 cups of water). Add 1 tsp of salt into the water. Take the liquid to a boil, then add in 1 cup of rice. (which will equal about 2 cups of cooked rice.) Stir it a bit to even it out, then place a lid on the pot. Turn the heat to low and cook it for 20 min. Once done, let sit for 5 minutes, then fluff gently with a fork. Set aside. Now, turn your stove top to medium- low heat. While your stove is heating up, dice your onion. Using a skillet, add the onions and season them with 1tsp each of black pepper and salt. Cook until soft, about 10 minutes, stirring occasionally. Turn the heat up to medium, then add the ground beef. Season with beef seasoning and the rest of the salt and pepper. (Optional: add crushed red pepper) Add the minced garlic. Cook until no longer pink (about 10-15 minutes), chopping the meat into smaller pieces along the way. Drain off excess fat.


Turn heat down to low. Add diced tomatoes, rice, and tomato sauce, mix until fully combined.


Add basil and oregano to taste. Serve hot.


Notes:

This recipe makes 4 servings. You can half the recipe if you don't want to make that much, or you could save the rest for later so you don't have to cook on a different day.


Alternatives: You can add other vegetables such as green bell pepper to add some variety. Additionally, the beef used can be substituted for black beans (1 15 oz can) to make this vegetarian.


Vegetarian Chili

Hello and welcome. In this video I'll show you my recipe for Vegetarian Chili. Let's get started.


The ingredients you need are:
2 medium sweet potatoes
2 medium russet potatoes
1 medium onion
2 cans of black beans
2 cans of diced tomatoes


To taste: Black pepper
To taste: Salt
1 Tablespoon Chili powder
1 Tablespoon Smoked paprika
1 Tablespoon Ground cumin
1 teaspoon minced garlic


Optional Ingredients:
Sour cream/Yogurt
Cilantro
Green Onion
Cheese


Begin by peeling the sweet potatoes and russet potatoes. When cutting your potatoes, make sure to rinse them off first to get any excess dirt off of them. Additionally, cut out any bad spots or "eyes" as you go along. A tip for peeling your potatoes without a peeler is to use a paring knife or a small knife like I have here and cutting one end of the potato flat. Then, you put the flat end against your cutting board and peel downward to prevent injury. Also make sure your knife is properly sharpened. A dull knife is more dangerous because it doesn't cut through the food as easily, which means it will require more force to get through the ingredients. Then, chop your onion.


While chopping, place a cooking pot on your stove and spray it with cooking spray, setting the heat to medium. Sautee your onions first, which will take about 7-10 minutes. Season them with a pinch of salt and black pepper.


Once the onions have turned soft and translucent, add in all the diced potatoes, salt, chili powder, cumin, and smoked paprika. Mix for 1 minute, then add the diced tomatoes and black beans, as well as 2 cups of water, turning your stove to high.


Simmer and cook for 20-25 minutes, stirring occasionally to make sure nothing sticks to the bottom of the pot. And that's it!


To finish it up, add your toppings and sides of choice. Here I use cilantro, sound cream, and parmesan cheese. Additionally, use your best judgement in seasoning to give it the flavor you want. Thanks for watching!
